Wild sunflower honey is native to the forest within the Trans-Mexican Volcanic Belt. This honey is very particular since it naturally crystallizes into a creamy consistency, which explains why it is also named butter honey. It originates on the slopes of volcanoes such as the Popocatépetl and Iztaccihuátl, where bees feed themselves from two different wild sunflowers: Acahual (Simisia Amplexicaulis) and Casahuate (Ipomoea Arborescens), which are white and yellow flowers. This explains why the Wild Sunflower honey color varies from yellow to white, depending on the predominant nectar. We recommend tasting it with yogurt bread, pancakes, or as a sweetener for tea.
